‘Faster’ Slow Cooking With MEC — No Compromise On Nutritional Value


‘Faster slow cooking’ – what an oxymoron! How many times did we wish the food cooked a little faster? And sometimes the reality is very different: come back from work expecting your slow cooked food to be ready-to-serve but just to find out the machine burned your food, or is defunct, or only part of the meat is cooked or potatoes did not cook properly! Then you have to put it back on the stove to finish cooking. Beef Stew 

It takes about 6-8 hours to cook in a conventional slow cooker but with MEC you can cook the same recipe in less than 2 hours with little to no oil. Just add 1 tsp of oil (if you like) into MEC pot and add chopped onions, tomatoes, carrots, bay leaves, thyme, beef, and water. Start on low and let it stay there for 5-10 minutes, increase to medium after and let it cook at that heat for 45 mins of cooking & boiling. Reduce back to low and check for doneness at 1.5 hours. Turn stove off when meat is cooked to your satisfaction.  You will find beef tenderly cooked and the stew very savory. 

Thai Chicken Curry 

Chicken Curry In Clay Pot: Tasty N Tender ChickenThis recipe usually takes 6-8 hours in a conventional slow cooker but with MEC, it’s a 1.5 hours process: pour 1 tbsp oil, coconut milk, Thai green curry paste, chicken thighs, chopped aubergine, ginger, lime leaves, brown sugar, into MEC pot. Start on low and let it stay there for 5-10 minutes, increase to medium after and let it cook at that heat for 30 mins of cooking & boiling. Reduce back to low and check for doneness after 50 mins to 1 hour of cooking. Enjoy the fast cooked and better tasting Thai Chicken Curry! 

Vegetable Curry 

The cooking time for this recipe is 6 hours in a conventional slow cooker. Here’s how to cook it in less than an hour or so in MEC: put 1 tbsp oil, coconut milk, sliced garlic, green chilli, chopped ginger, coriander, vegetables into the pot, stir well and let it cook at low for 5 mins, increase to medium after and check for doneness 45-60 minutes. Treat your taste buds with the rich taste and nutritionally dense vegetarian curry.

How I Use My MEC

FOR SLOW COOKER i recommend put a MEC in your slow cooker instead of the original stoneware that the slow cooker comes with (because one never knows whats in those mass produced moulds). I found that 3-in-1 slow cooker takes in medium size MEC. Also, Rival 5 qt crockpot accommodates medium size MEC. Place a diffuser under your clay pot and replace the clay lid with a glass or metal one for tight closure and prepare most nourishing stews. Here is my favorite recipe (created by yours truly) First line the bottom of MEC with chopped onions. Then put 2 cups of broth (beef, chicken or turkey or combination of any two); add 1 pounds of turkey meat (Whether thigh or breast, its all good). Add brown rice (same volume as the Turkey breast). Add strips of 3 dried apricots and about 6 cranberries. Optional (a and b): a. Put 1 tablespoon grated fresh horseradish or pepper to taste. b. Add 1 Teaspoon of crushed bayleaf. Add water to the liquids of the pots, to allow the liquids, in total, to reach same height in pot as the turkey breast and rice. Drizzle 2 tablespoons of olive oil on top. Cover with either MEC lid or glass lid. Let it cook (2 hours on low heat over gas stove) or 3 hours on high in a slow cooker. Before you serve, add crushed cumin. The natural clay imparts a taste and aroma that only a good quality clay cookware can! I cant think of my kitchen without my favorite pots - Miriam's Earthen Cookwares! Thank you Miriam!!!

Finally Something Absolutely Healthy...

Finally something absolutely healthy on the market. I use to love slow cookers but there was too much of lead leaking into my food. As longer there was a finished glazed ,lead (it’s part of the glazed chemicals that EVERY ceramic company use) was leaking when the pot was hot. Most stainless steel pots that are made in China leak nickel and aluminum as well (go figure?!). Miriam cookware is AMAZING!! The food that I cook in the 3 pots I bought from her is delicious and absolutely healthy. On top of it Miriam have great warranty and great customer service.

My Family And I Are So Grateful
