Griddle Recipe

Delicious & Juicy Grilled Vegetables in Miriam’s Earthenware Large Griddle


  • Broccoli
  • Cauliflower
  • Zucchini
  • Summer Squash
  • Salt and Pepper
  • Garlic, 3-4 cloves optional


  1. If you will be using it in oven, soak seasoned griddle for 10 minutes in a clean sink. Seasoning instructions here.
  2. While Griddle is soaking, chop and/or slice desired vegetables such as broccoli, cauliflower, zucchini and summer squash into small to medium pieces in a uniform size.
  3. Then crush cloves of garlic in motor/pestle. In a small bowl add 2 tsp of pure cooking oil (coconut, sesame, olive, etc.,), add crushed garlic, salt and pepper. Then apply this mixture onto the vegetables with your fingers or a brush.
  4. Place vegetables on the MEC griddle and place the griddle either on the stovetop or in oven.
  5. For stovetop cooking, cook approximately 20-30 minutes.
  6. If using an electric stove, remember to place a diffuser on the stove (between burner and griddle). If cooking in the oven, turn the oven on to 400 degrees F and cook for 20-30 minutes.
