Savory Lemon, Honey, and Basil Chicken with a summery sweetness

If you are looking for a refreshing and delicious summer recipe to add to your weeknight routine this one is for you! Turmeric is a natural antioxidant and ant-aging spice. Fresh garlic and lemon are anti-inflammatory. As it cooks in your MEC pot that is lead and toxin-free, it creates a natural broth that is both detoxing and bursting with flavor. Enjoy!

Serves: 2-3 people| Cook Time: 30-40 minutes

Ingredients:

  • 3 chicken breasts, rinsed and chopped into 2-inch cubes
  • 1 small onion, chopped to small size
  • 3 cloves of fresh garlic, crushed or finely chopped
  • 1 tbsp lemon juice, fresh is preferred, so juice squeezed from 1 medium sized lemon.
  • 1 tbsp honey
  • 2 bay leaves
  • ½ cup basil, rinsed and roughly chopped
  • 1tsp. of turmeric powder
  • Salt and pepper to taste

 Instructions:

  1. Place your MEC medium pot on the stove, set heat to low then add your chopped onion and garlic to pot. Add turmeric powder, stir and cover lid and let it simmer until softened, for about 5 minutes.
  2. Next, add your chicken to the pot. Next, add your chicken to the pot, stir in with rest of the ingredients, cover and cook for 10 mins on low. Then add in bay leaves, honey and the lemon juice, salt, and pepper. Increase heat to medium-low and cook for an additional 7 minutes.

Add basil leaves, fold leaves in with the rest of the ingredients in the pot. Cover lid, turn off stove and let flavors blend together with stove off. Serve after 10 mins or so.
