How To Cook Quinoa in MEC
Cooking quinoa was an interesting experience because typically (with metal pots) quinoa is cooked by boiling water adding quinoa and constantly stirring to prevent it from burning. Then to turn off the stove just to find that a lot of the quinoa is stuck to the pot and the texture is hard and chewy.
It is much simpler (and healthier!) to cook quinoa in a clay pot. There are only two steps. Step one: add your water to the pot. Step two: add quinoa to the pot and stir. Let it cook for 12 to 15 minutes until almost done (when you see just a bit of water in between the grains).
It is high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. It’s gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids.
